- 4 pounds Chicken (whole chicken or a mix of parts like legs, thighs, wings, neck etc.)
- 1/2 pounds Beef (optional)
- 10–12 cups Water (add more if needed during cooking)
- 3 large Carrots (peeled)
- 1 Parsley root (peeled)
- 1/4 large Celery root (peeled)
- 1/2 Leek (peeled)
- 2 large Garlic cloves (peeled)
- bunch Fresh parsley
- 2 Bay leaves
- 3 Allspice berries
- 1 teaspoons Black peppercorns (whole)
- 2 teaspoons Salt
